Chocolate Chip Cookies Recipe

My boyfriend has been craving sweets a lot lately so I decided to bake him some chocolate chip cookies for Valentine’s Day. I got this recipe online but I adjusted some of the ingredients base on what I have at home.

1 ¾ cup all-purpose flour
1 ½ tsp table salt
1 teaspoon baking soda
1 cup unsalted butter
1 ¼cup dark brown sugar
2 teaspoons vanilla extract
1 teaspoon coffee powder
1 large egg
1 large egg yolk
½ cup semi-sweet chocolate chips
½cup (80g) dark chocolate, chopped


In a medium bowl combine the flour, salt, and baking soda. Set aside.

In a medium or large saucepan, add the butter and melt over medium heat. Bring the butter to a boil, stirring frequently. Once the butter has turned a nice nutty brown, remove from the heat and pour into a large liquid measuring cup to stop the cooking. Allow it to cool down for a minute or two, give it a stir, and carefully add 2-3 tablespoons of water to the butter to bring it back up to 1 cup (240 ml) of liquid.

Set aside to cool to room temperature. You want to make sure the butter is still liquid when you’re adding it to the dough later on, so make sure to remove after 15 minutes.

In a large bowl, add the sugars, vanilla, coffee powder, and cooled brown butter. Mix well together. Add the egg and yolk and beat until incorporated.

Add the dry ingredients, about ⅓ of the mixture at a time, and beat between additions until just incorporated. Using a wooden spoon, fold the chocolate chips and chunks into the dough.

roll the dough into balls and place onto the baking tray with oil. (You can also refrigerate the dough for optimal flavor or, even better, overnight). Preheat the oven to 350˚F (180˚C). Evenly space the dough 3 inches (8 cm) apart from one another. Bake in a preheated oven for 12-14 minutes. Let the cookies cool on the baking sheet for 2-3 minutes before transferring to a cooling rack to cool completely. Enjoy!

Pinto Art Museum + Burrow Cafe

My boyfriend, Luis, and I have been thinking about where to go for our next date. I suggested we visit the Pinto Art Museum in Antipolo. I’ve been also eyeing to try a quaint cafe, the Burrow’s Cafe, a hidden restaurant in Antipolo and is also near the Pinto Art Museum.

Before that, here is our outfit for the date.

I wore a pink lace cutout dress paired with white sneakers while Luis wore a white polo shirt, khaki shorts, and white sneakers. A lot of our friends mentioned that our outfits match the places we go to. And now it’s our goal to make sure our outfits match each date! #couplegoals

It was a clear Sunday morning, we head on to Antipolo. We first stop by Starbucks along Ortigas Extension to have our breakfast.

I ordered a ham and cheese croissant and Brown Okinawa Latte. Luis ordered an americano and corned beef with hash brown. We also got cinammon roll for our sweet tooth. Finally, we were able to redeem the Starbucks Travel Organizer! (Thanks, Babe! <3) I got the one in mint. :))

After breakfast, we head on to Pinto Art Museum. Since it was a Sunday, there were quite a lot of people. A lot of people were taking pictures of the scenery as it was a beautiful place.

Be sure to wear comfortable clothes when going to the Museum. It was sunny and quite humid. And don’t forget to keep yourself hydrated!

After the Museum trip, we had reservations at Burrow’s Cafe. Burrow’s Cafe is located inside Beverly Hills Subdivision. It is called the Hidden Restaurant in Antipolo Beehouse, (which I think is not so hidden anymore- apparently a lot of people know about this place!).

We hang around a bit as we arrived early, (our reservation is at 3 pm and we arrived at 1 pm). Luis and I are a bit hungry and tired so we ordered a cold brew and a slice of carrot cake while waiting for our table. Good thing they were accommodating us, and eventually we got a table even before our reserved time.

Finally, its lunchtime! My babe Luis, let me order anything I want from the menu. For our appetizer, we ordered the flatbread with assorted dips. We also got a tuna salad, and for our mains, Luis got the Burrow Burger and I ordered a eggs benedict with smoked salmon and bacon.

Let me tell you, everything we ordered taste heavenly. My favorite is the tuna salad. Light and healthy perfect with a hint of sweet and sourness from the grapes and tomatoes. The carrot cake and cold brew latte are also to die for! The cold brew wasn’t too bitter or sweet even with honey, just the perfect balance, and makes it even more special while eating the sweet and crunchy carrot cake.
